It's far too easy to accidentally bump the quick sell instead of quick craft button, which can be devastating if it's a super rare item. If all the quick sell/craft/store fields were set to 0 by default then this would make such occurrences far rarer.
It would be convenient to have an option to toggle auto sell, but making the default value 0 seems like something that could be implemented far easier.

I feel this would work well if items that are locked in Farmer’s Market were to default at 0 while unlocked items stay at their max value. A great idea!

You are already asked if you are sure that you want to sell, when you hit the button for Quick Sell, while there isn't any additional pop-up when you select the button for Quick Craft. So that is your warning there. It is also the case, even if you have the "Yes I'm Sure" upgrade from Farm Supply.
So if this were to be implemented, please make it a toggleable option in Settings. I do not want to have to enter the full amount every time I want to Quick Sell. It takes the quick out of it. I love that I can have items locked in the Farmer's Market and still be able to sell the full amount with Quick Sell.
EDIT to my previous comment. You are only asked if you are sure that you want to sell, when you hit the button for Quick Sell, IF the item is locked. So if you are worried about selling a super rare item, I would suggest locking it down. It can be done one by one, or all items can be locked all at once in the Farmer's Market.
